5 star :: healthy, digestible breakfast item. Think granola bar meets flavorful oatmeal. Vegan option!
3 cups quick cook oats
1/2 cup vanilla greek or coconut yogurt
1/2 cup apricot sauce (pureed and canned from harvest) or applesauce
1/4 cup coconut oil
1/4 cup honey
1/2 tsp sea salt
10 drops liquid stevia
1 tsp vanilla
1/2 tsp baking soda
1 tsp cinnamon
1 TB chia seeds
2 TB egg powder (substitute with flax flour to make vegan)
1 apple grated (pink lady, honeycrisp, chilean or fuji)
Combine and chill to start breaking down the oats for digestions. Make 12 balls, flatten to discs. Bake at 350 degrees for 30 min or until slightly crispy on top. Store semi-open in fridge for up to 5 days.
