Mint Chocolate Cookies (gluten free)

Scrumptious buttery decadent chewy. No one guessed they were gluten-free!


2+ cups Oat Flour 1/4 cup Tapioca Flour 2/3 cup Unsweetened Cocoa 1 tsp. Baking Soda 1/2 tsp. Salt 1 cup Butter 2/3 cup Granulated Sugar 2/3 cup Packed Brown Sugar 1 tsp. Vanilla Extract 2 Eggs 1 1/2 cup Ghirardelli Mint Morsels

Preheat oven to 325 degrees.

Combine flours, cocoa, baking soda and salt in medium bowl. In an electric mixer, beat butter and both sugars until well combined. Add in vanilla. Add in eggs, one at a time beating well between each addition. Gradually beat in the flour mixture. Stir in the morsels. Drop by tablespoonfuls onto baking sheets.

Bake for 11 to 13 minutes at 325 degrees until centers are well set. For larger cookies bake at 350. Cool on baking sheets for 2 minutes and then transfer to a rack to cool completely.
