The kids gave a mixture of ratings from 1 to 4 to 3 . Honestly this is a great recipe with beautiful flavor if you love the flavor of lamb! Jade loved it at first but soon tired of the flavors. I would recommend serving along with other dishes. If you find that kind of meat too earthy then I would suggest adding the optional tomato paste to tone it down. I personally thought it was wonderful, extremely tender meat that shredded in the sauce.
INGREDIENTS
1.5 lbs lamb, cut into 2-3 inch chunks (bone in neck)
2 tablespoons curry powder
1 teaspoons ground allspice (didn’t have any)
2 T fresh ground ginger
2 teaspoons salt
3 tablespoons coconut oil
1 onions, thinly sliced
10 cloves garlic, minced
1 can tomato paste
2 cups beef stock
5 medium carrots, cut into chunks
Can of tomato paste (optional)
steamed rice, to serve
Sauté Lamb In oil in instant pot. Add onions. Add all but tomato paste. 45 min pressure cook. Add paste. Serve
