Amazing as a cookie for these sandwiches. 4 ripe bananas 1 egg 1 cup coconut flour 1/4 flax flour 1/4 cup coconut oil 1/2 cup lemon juice (add more if needed) 1 tsp baking soda 1 tsp Vanilla extract 1 tsp monk fruit powder Poppy seeds (I was out) Refrigerate 2+ hrs. Make into balls. Flatten. Bake 350 for 25-30 min. Cool. Layer with ice cream and freeze.

  • Breakfast Apple Cinnamon Oatmeal Cookies

    5 star :: healthy, digestible breakfast item. Think granola bar meets flavorful oatmeal. Vegan option! 3 cups quick cook oats 1/2 cup vanilla greek or coconut yogurt 1/2 cup apricot sauce (pureed and canned from harvest) or applesauce 1/4 cup coconut oil 1/4 cup honey 1/2 tsp sea salt 10 drops liquid stevia 1 tsp vanilla 1/2 tsp baking soda 1 tsp cinnamon 1 TB chia seeds 2 TB egg powder (substitute with flax flour to make vegan) 1 apple grated (pink lady, honeycrisp, chilean or fuji) Combine and chill to start breaking down the oats for digestions. Make 12 balls, flatten to discs. Bake at 350 degrees for 30 min or until slightly crispy on top. Store semi-open in fridge for up to 5 days.

  • Paleo Cheesecake (Factory) - Lemon, Almond, Coconut, Chocolate Versions

    5 star :: paleo and easy dessert if you plan ahead Great creamy flavor, crust was excellent. Easily adapted for different flavors. Rich! 1 cup walnuts 1/2 cup flax flour 1 T coconut manna 1/4 tsp stevia powder 1/4 tsp cinnamon 1/2 tsp sea salt 1 date Use food processor. Press into mold. 3 T cashew milk (water) 1/2 tsp unflavored gelatin Bloom gelatin in the milk for 5 min. Slow boil for 5 minutes whisking. Food Process then add gelatin: 1 1/2 c raw soaked cashews 2 Tb coconut manna 1/2 tsp stevia pure 1/2 tsp monk fruit pure 1 T fresh lemon juice or apple cider vinegar 1 T inulin (chicory root) 1 T vanilla Mix one of the following: lemon zest (lemon flavor), almond extract, coconut extract (shredded coconut), or cacao nibs to customize. Makes 1, 8" cheesecake or 6x8 pan, or 4 small mini 4" cheesecakes. Chill 4 hrs or even better overnight. Top with raspberries, toasted coconut, slivered almonds, chocolate ganache.

(add extra coconut cream to the batter to make it rich) 6 eggs 1/2 cup local raw honey ( we love Woodys! ) 2 cups cooked rice (I love sprouted brown Rice) 2 cups almond or macadamia milk 2 tablespoons coconut milk powder or MCT powder 1 teaspoon gelatin 1 teaspoon stevia powder 1/2 teaspoon monk fruit powder 1 teaspoon cinnamon 1 teaspoon vanilla bean powder Sea salt Whisk ingredients. Pour in 13x9 pan. Speed convection at 350 for 30-35 min. With water in pan beneath. Eat cool or warm with whipped coconut cream. Amazing texture and healthy for you.

Trying to incorporate as many healing foods as possible in a salad without it being a standard salad. 2 cups of thinly sliced organic red cabbage 2 cups chopped Organic broccoli 5 cloves smashed garlic 3 stalks organic celery fine chopped 1/4 cup chopped organic cilantro 2 tablespoons extra-virgin olive oil 1 teaspoon dehydrated lime zest Sea Salt and pepper to taste Sliced avocado on top prior to serving. Optional but 100% recommend. Let it sit at least an hour before eating, stays fresh up to 3 days later! NOTE: both kids said it was delicious. My 11-year-old went in for second helpings saying “can’t argue, it’s pretty good “

    5 star :: one of my best cookies that's paleo The best Paleo cookie I have ever made. It took some work to get it to the right texture and credibility. It has arrived. 1 cup creamy natural cashew butter ( Julie’s) 1/2 tsp each pure stevia powder-monk fruit combo 1 tsp vanilla extract 2 eggs, slightly beaten 1/3 cup vanilla protein powder 1/2 tsp baking soda 1/4 tsp salt sea salt, for sprinkling on top Sprinkles pressed on top of each cookie or incorporated in the batter For paleo chocolate chip cookies add: 1/3 cup dark chocolate chips (dairy free or vegan, if desired) Mix. Chill. Make into 2 Tb balls. Flatten. Cook for 5 minutes speed convection or 8 min standard at 350 degrees F

    5 star :: one of my best recipes for summer dessert Paleo Version: 1/4 cup Grass fed butter 1/4 cup monk fruit blend 4 black plums sliced thin 1 1/4 c paleo flour (almond,flax,cashew,arrowroot) 1 1/2 tsp baking powder 1/4 tsp sea salt 3 T coconut oil 1 egg 1/2 tsp monk fruit powder 1/2 tsp pure stevia 3/4 cup almond milk 1 tsp vanilla 350 for 40 minutes. Let cool 15 min. Refriderate 30 min, flip and serve. Crust is amazing! Like a donut. Regular Version:

    4 star :: paleo and easy dessert if you plan ahead Great creamy flavor, crust was excellent. Easily adapted for different pies like peanut butter or chocolate or coconut. I used 1/2 cup flax for part of almond flour and extra lemon juice for coconut milk. Added lemon oil to crust and filling. Rich! 1 cup almond flour 1/2 cup flax flour 3 T coconut oil 1 Tb raw honey 1/4 tsp cinnamon 1/2 tsp sea salt 1 date 1 1/2 c raw soaked cashews 2 Tb coconut oil 1 T fresh lemon juice 1 T canned coconut milk 2 T raw honey vanilla lemon zest use food processor. chill 4 or more hours.

  • Nutty Parm

    5 star :: paleo vegan and oh so satisfying Nutty Parm (vegan paleo). Sooooo good 1/2 cup almonds 1/2 cup Brazil nuts 1/2 cut nutritional yeast 2 T seasonings Pulse!! Seasonings: ▢ 2 tablespoons nutritional yeast * ▢ 1 tablespoon onion powder ▢ 1 tablespoon dried parsley ▢ 1 tablespoon dried basil ▢ 2 teaspoons dried thyme ▢ 2 teaspoons garlic powder ▢ 2 teaspoons dry mustard (mustard powder) ▢ 2 teaspoons paprika ▢ ½ teaspoon ground turmeric ▢ ½ teaspoon celery seeds INSTRUCTIONS Combine all the ingredients in a spice grinder or blender to mix well and pulverize the dried herbs and spices. Transfer the blend to a shaker bottle or jar with a tight-fitting lid. Store in a cool, dry place.
